Espresso Crinkle Cookies
Adapted from Better Homes & Gardens recipe. What could be better..chocolate and coffee. Easy cookie to whip up at the last minute.


Espresso Crinkly Cookies

Ingredients:

1/3 cup Soft Butter
1 cup Packed Brown Sugar
2/3 cup Unsweetened Cocoa Powder
1 Tablespoon Espresso Powder or Instant Coffee
1 teaspoon Baking Soda
1 teaspoon Cinnamon
2 Egg Whites
1/3 Cup Plain Low-Fat Yogurt
1 1/2 cups Flour
1/4 cup Granulated Sugar

Procedure:
Heat oven to 350  degrees.
Whip butter on high for 1 minute. Add sugar and cream.
Add cocoa powder, coffee, baking soda and cinnamon.
Beat until combined, scraping sides of the bowl occasionally.
Beat in egg whites and yogurt until combines.
Beat in as much of the flour as you can with the mixer and stir in remaining with a wooden spoon.
Place granulated sugar in a small bowl. Roll dough into balls and drop into sugar and roll.
Place on cookie sheet 2inches apart.
Bake for 8-10 minutes or until edges are firm. Cool and Enjoy!
