Grandma (my mom) has been making these cookies for my boys since they were born, 19 and 20 years ago. They are healthy and flour -free. They also freeze well. The boys are purests and like them with just chocolate chips but I have made them with M&M"s, dried cranberries, white chocolate chips, raisins and several different kinds of nuts. Enjoy them your way, just remember not to overbake!


Ingredients:
3-Eggs
1/2 cup Butter
1/2 cup Brown Sugar
1/2 cup White Sugar
1 1/4 cups Creamy Peanut Butter
1 Tablespoon Vanilla
4 cups Gluten-free Oats
2 teaspoons Baking Soda
Lots of Chocolate Chips & Nuts
Directions:
Cream together Eggs, Sugars, Peanut Butter and Vanilla.
Combine Oats and Baking Soda.
Stir dry ingredients into wet and incorporate.
Add chocolate chips and nuts and mix.
Scoop with small ice-cream scoop and lightly flatten.
Bake at 350degrees for 10-12 minutes.
Do not bake any longer, they will get hard!!
